Pat,
You should definitely go further south to Provence. Anywhere south of Avignon should be perfect in May. We lived in Aix-en-Provence over 30 years ago and I can remember April being iffy, but by May it was gorgeous. The summers are hot and dry - no humidity. I really can't remember anymore when the lavender comes into bloom, but when it does it's a glorious thing to see -- might be later on in the summer. Anybody know? If you want to know some lovely little villages to visit, I'll write to you separately off the list.
